Packing the bowl
- Mix the molasses inside the tin before you take any out, so the glycerine and flavour are evenly spread through every leaf.
- Fluff the molasses into the bowl loosely rather than pressing it down, so heat can pass through and the draw stays smooth instead of tight.
- Leave a small gap of 1 to 2 mm between the surface of the molasses and the foil so the top layer does not scorch straight away.
Technique for a better session
- Perforating the foil: use a fine needle and make many evenly spaced holes in a circular pattern; this spreads the heat evenly across the whole bowl.
- Managing the heat: start with the coals around the rim of the bowl and move them inward gradually as needed, to avoid a harsh start to the session.

Why does the shisha taste burnt from the start?

The second is putting the coals in the middle of the bowl from the start instead of around the rim. The third is too many coals, or coals that have not fully lit. Start on the rim and move them inward gradually.
How do I keep molasses fresh?
Seal the tin as soon as you finish, because air exposure dries out the glycerine and the molasses loses its flavour. Store it somewhere cool and dry, away from sunlight and heat. If it has dried out a little, mixing it thoroughly before use helps redistribute the remaining glycerine.
